Beets are loaded with vitamins and minerals and low in calories and fat. They also contain inorganic nitrates and pigments, both of which have a number of health benefits.
Beets contain a high concentration of nitrates, which have a blood pressure-lowering effect. This may lead to a reduced risk of heart attacks, heart failure and stroke.
Beets are a good source of fiber, which is beneficial for digestive health.
Studies in isolated human cells have shown that the pigments in beets may help reduce the growth of cancer cells.
I prefer to cook my beets in water with skin on and a bit of the stem remaining. Feel free to cook your beets any way you like most.
Some prefer to peel first and add to stalk to cook. Adding peeled beets to your stalk does allow for a richer colour!
Dice an extra beet to sprinkle onto soup before serving or to stir into soup.
1. Add beets to water and cook until tender - approx. 20 minutes, depending on their size. I like to cook with skins on and a bit of the root to avoid bleeding. After they are cooked I put the beets in cold water then I use the gloves I use to wash dishes to easily peel the beets 2. In a large pot, heat oil over medium heat. Sauté onion, 5 minutes. Add garlic and ginger; cook, stirring often for a couple of minutes 3. Add stock and cooked beets to this pan and stir. You can cut up your cooked beets into smaller pieces before adding to stock. 4. Bring to a boil the turn down heat. 5. Add tinned coconut milk or thickener of choice. 6. With an immersion or regular blender, puree soup, adding remaining 1 cup stock as needed to reach desired consistency. 7. Add salt and pepper. 8. Garnish with parsley and extra grated raw or cooked diced beets. Enjoy! Note: If you would like a deep red soup decrease the amount of tinned coconut oil that you add. The more coconut milk that you add the pinker your soup will be. Perfect for Valentine's Day! Beetroot is a delicious and versatile vegetable that is easy to add to your diet. Choose beets that are heavy for their size with green tops still attached.
Don't forget to save our beet greens. They are delicious just sauted in a bit of organic butter, ghee, olive oil or coconut oil with salt!
